Hey there!
I’m so excited to share my latest eats this What I Ate Wednesday! Last weekend I had an amazing Cuban feast at my friends’ house. I have to say I don’t have a ton of experience with Cuban food, but if my dinner last weekend was any indication, I love it!
Is there anything better than getting together with friends for a meal???
I think not.
We had so many amazing dishes including ropa vieja (which my friends told me meant old clothes! hahaha
whatever it meant, it tasted delicious!), authentic rice and beans, delicious homemade salsa, and even cuban sandwich quesadillas! But two of my favorites were these green beans that were tosses with tons of bacon and caramelized onions and topped with a giant mound of cilantro. I am totally stealing this simple but super impressive side dish!
My other favorite?
FRIED PLANTAINS. You guys, these were amazing! I could have eaten bushels of them (and had it been socially acceptable to do so at the table I would have!) because they were so amazing. Plus, my friend keep telling me how easy they were. Essentially, you just fry them, smoosh them, and fry them again, but I think I’ll take her word for it and just let her make me these every time I come over!
One of my other friends made this amazing tres leches cake. Have you ever seen anything so pretty? It was not just pretty either-it was delicious!
I also made this little treat…just for fun…
Homemade peanut butter cups! They were a hit! I’ll be sharing the recipe asap!

I am so in love with plantains–I want to come to this Cuban night just for those alone! I try to make my own plantain dishes, but it’s never quite the same.

That’s exactly what I thought until I tried these! They were fantastic! I am gonna try to recreate them and I’ll let you know

The Cuban food looks so good, especially the plaintains, the cake, the green beans, the sandwiches, the beans…well pretty much everything. I love plaintains and had them when I was in Puerto Rico a few years back. They are amazing.
And I can’t wait for your Peanut Butter Cup recipe: a little homemade indulgence is one I can definitely get down with.
