Monday, Monday. Another week of work. Another early morning. Another batch of granola! Can you tell there is only one thing there I’m excited about!
I haven’t made a secret of my love for granola. I make a batch almost every Sunday so that I have it throughout the week. I eat it with greek yogurt, on salads, on top of frozen yogurt or ice cream, and straight up by the handful. Because I make lots of granola I try to experiment with new flavors all the time. I make wayyyy more granola than I post up here, but every once in a while a granola experiment blows my socks off. Ladies and gentlemen, Cherry Almond Granola!
My love affair with almond extract began only recently. Before then, it was just something I had around to put into the occasional cookie recipe or forget about in my cupboard. Now, I see almond extract in a whole new light. This lesser-used extract packs a HUGE nutty punch (hahaha that sounds kind of funny/I have the sense of humor of a third grade boy) and adds a super potent flavor dimension to whatever you put it in. Disclaimer! You do have to choose your almond extract recipes carefully-because it is so concentrated it can easily take over a recipe-so I don’t use it a lot but when I do it can be magical. Enter: Cherry Almond Granola!
Recently, just for fun, I checked out some grocery store granola brands. I could not find ONE with fewer than 10 ingredients. AND all of them had some time of oil listed as one of the ingredients. Guess what people? This granola has FIVE ingredients, NO oil, and tastes AMAZING!
Oats. Dried Cherries. Almond Extract. Egg Whites. Honey.
Boom. Take that store bought granola!
In a big bowl mix all the ingredients except the dried cherries. Spread onto a baking sheet and bake at 400 degrees for 20 minutes, turning halfway though. Remove from oven, add cherries, and let cool completely before storing.
20 minutes for a healthy and delicious snack all week? Yes please!
The nutty almond flavor with the oats and cherries is perfect. The little bit of honey gives the perfect amount of sweetness and makes the granola extra crunchy! I am literally counting down the minutes until I can have a big handful of this atop some greek yogurt for my mid-morning snack. Get here faster 10:30!!!
Cherry Almond Granola
- 3 cups old fashioned oats
- 3 egg whites
- 1 1/2 teaspoons almond extract
- 2 tablespoons honey
- 1/2 cup – 1 cup dried cherries
Preheat oven to 400 degrees
Combine first 4 ingredients in a big bowl and mix well. Spread onto a baking sheet and bake for 20 minutes, turning granola halfway through baking. Remove from oven and add dried cherries. Let granola cool completely before storing in an airtight container for the week.
