What I Ate Wednesday – Love my veggies!

Finally!! I am finally fully jumping on the WIAW Love Your Veggies Month bandwagon :) The past few weeks I have been stretching it a little bit, so I went in full force this week! So without further ado…

Breakfast: Green smoothie – Spinach, banana, vanilla protein powder, frozen mango. YUM! And of course, coffee!

Lunch: Mixed greens salad with apples, goat cheese, walnuts, and blueberry balsamic vinaigrette. Delish!

Snack: 3 sliced kiwis. I got a giant box of these at Costco and I am loving making my way through them! :)

Dinner: By this point in the day I was loving my veggie-filled meals, but I needed some protein. I still wanted to stick with the veggie theme though, sooo….

Grilled chicken sausage with peppers, onions, and homemade pickles! I have to give credit to the hubby for this one- he was the mastermind behind this yummy meal. We also had a side of quinoa with mushrooms and garlic. Veggie filled, but totally satisfying!

As for dessert???

It’s that time of year again!!! I love me some girl scout cookies!! :) Thin mints are the death of me! What is your favorite variety?
